I have a HD antenna in my attic for local channels. With that, I use
TVHeadend for DVR, with playback on Jellyfin via Roku. It's a bit more work
than the other suggestions already provided, but it's not a bad low cost
option.
I am curious to hear how others do this, so thank you for asking this
question.

Thanks for the response. I should have specified that what we're
watching is mostly Network series and VOD programs, with no gaming or
locally stored files.
